Osefina Community

Peru's fifth-highest mountain, the snowy Ausangate, is surrounded by a conservation area that serves as a home to the herder communities of Osefina and Chillca. This remote region offers spectacular views of the Vilcanota Mountain Range and is only known by ambitious hiking aficionados who aim to complete the challenging Ausangate Trail. Similar to the Incas, both communities revere the highest 'Apus' (mountains) and view their glacial waters as the origin of life. Community members who work as wranglers along the route have witnessed the difficulty of the Ausangate multi-day trek, which involves camping at high altitudes. To address this challenge, they worked with an entrepreneur from Cusco to build three small eco-lodges along the trail. These lodges are spartan but well-appointed enough to provide comfort at the end of a strenuous day. Staying at one of these lodges is a holistic experience, as the communities not only run them but also participate as hosts, llama herders (to help with luggage), guides, and cooks who prepare delicious meals using locally sourced ingredients. All of this takes place at an average altitude of 4,500m (15,000ft)!

Did you know that Cusco boasts one of the most exotic varieties of corn? Yes, the so-called ‘White Giant Corn’ grows in the Sacred Valley. Despite today’s challenges including climate change and price volatility, Maria del Pilar and her husband Yussef decided to carry on the mission to preserve and improve Cusco Giant Corn’s legacy for future generations at Hacienda Sarapampa. This charming family-owned farm has been dedicated to corn production for three generations. Maria del Pilar and Yussef are the first ones that open the farm’s doors to visitors keen to learn about the origin of such a special variety and who value homemade creative cuisine prepared with love and fresh produce.

Joe was an eco-warrior long before the trend of sustainability began. Since establishing Inkaterra in 1975, he has made it his mission to promote ecotourism and sustainable development in Peru. Inkaterra works under a holistic approach, respecting cultural and natural values. The Inkaterra properties are built with indigenous materials ensuring a harmonious connection with the environment. They have actively involved the local communities in their development, training more than 4,000 locals in hospitality, agroforestry, and field-guiding. It was Joe’s dream to dedicate his life to research, conservation and education. He has sponsored significant inventories of local flora and fauna in the Peruvian Amazon.

Yurac is the proud owner of a coffee shop in Barranco that emphasizes both art and sustainability. With a background in sustainable fashion, she works on empowering local communities in producing traditional garments and art. The ethos of her coffee shop, named 'Felicia and Domingo', is balance, as she strives to obtain the finest coffee in Peru while ensuring that the coffee they procure is organic and promotes fair trade. For those who are peckish, an assortment of tasty desserts, toasts, and other snacks can be found. Furthermore, a variety of artworks from artisans throughout the country can be admired and purchased here!

Say the word 'Pan con chicharron' and those who know what it is will get hungry! ‘El Chinito’ (the Chinese) sandwich shop in Lima is THE place to go for an authentic 'Pan con chicharron' - a mouthwatering Peruvian sandwich made with the slow-braised pork and sweet potato topped with red onion relish. El Chinito opened in 1960 and has spent the last 60 years perfecting its recipe. Today the third generation still stays true to their founder Felix’s creations.

She was able to invest in high-quality paddleboards and tents that allow exploration without leaving a footprint. Arequipa boasts Peru's most recognizable and prized regional cuisine. The city's rich food heritage is still kept at humble eateries known as ‘picanterías’ - serving hearty meals. Almost every picanteria is family-run and boasts an inspiring story of effort and passion - much like the story of Benita, an 8th-generation cook. Perhaps it was therefore inevitable for her son Roger, an architect, to join the family business as a ‘picantero‘. In 2014 the last picanteria in the historic center closed its doors. However, don't despair, Roger and his mother Benita brought the tradition back to the historic center with La Victoria. Formulator of a culinary proposal called Anthropological gastronomy; Roger’s recipes pay tribute to centuries of food engineering in his country. Is there a better person to learn Peruvian cuisine from?

NowhereAQP is an innovative micro-brewery run by Lizzie and Devon - a Peruvian/Canadian couple. They offer an open and casual space to enjoy their unique varieties of craft beer and their delicious comfort food. Together with their committed team they have won many awards since they opened, including Best Peruvian Craft Brewery in 2020. Their sun-soaked patio is the perfect place to be for a lazy afternoon. Make sure to order some of their famous thick-cut fries and give the brewery dog, Pisco, some loving pats. NowhereAQP produces its delicious beers and ales in an environmentally conscious way. They use recyclable bottles and hops that are grown in the area, supporting local farmers. Kitchen waste lands in their compost bin (powered by PlantumAQP). Spent grain is donated to local farmers for animal feed who in turn provide them with fresh eggs and meat.

Yerko, Nani & Javier

In 2001, Yerko, Nani, and Javier joined forces to create EcoCamp, a trailblazing sustainable dome hotel in Patagonia that sets a new standard in eco-tourism. The hotel operates under the guiding principles of the 4 Cs: Conservation, Culture, Community, and Commerce. At EcoCamp, an impressive 75% of the energy needed is generated through hydro power and 20% is sourced from solar energy, while all CO2 emissions are carefully offset. The domes and walkways were constructed using wood, minimizing impact on the local flora. The domes feature large windows that allow natural light to flood the interior, and are also highly insulated, retaining heat from wood fires during the winter months. Yerko, Nani, and Javier are committed to sustainability, practicing recycling and composting at the hotel, sourcing seasonal ingredients for the restaurant and bar from local producers, and supporting nearby family-run businesses. In addition, Yerko, Nani, and Javier partner with organizations like Wheel the World and the Torres del Paine Legacy Fund to promote environmental education, trail restoration, and accessible tourism. They also introduced a gift shop dome at the hotel where visitors can purchase unique handicrafts made by local communities, further supporting the area's culture and economy. Overall, Yerko, Nani, and Javier's commitment to sustainability and community involvement make their creation - EcoCamp - a truly exceptional and innovative
